Cucumber Salad Recipe


Ingredients

( 1 ) 250 grams cucumber
( 2 ) 2 table spoons sugar
( 3 ) 50 grams daliya
( 4 ) 50 grams groundnuts (coarsely ground)
( 5 ) 5 green chillies (paste)
( 6 ) ½ tea spoon citric acid
( 7 ) 2 table spoons sesame seeds
( 8 ) 50 grams coriander leaves
( 9 ) 100 grams desiccated coconut
(10) 1 pomegranate
(11) Salt to taste

Method

( 1 ) Wash and chop the cucumber in chop-n-churn. Add salt and sugar to it. Keep it aside for some time. Squeeze it lightly.
( 2 ) Mix all the ingredients.
( 3 ) Garnish with finely chopped coriander leaves. Pomegranate seeds may be added if desired.

Guava Tomato Salad Recipe


Ingredients

( 1 ) 1 guava
( 2 ) 2 tomatoes
( 3 ) 1 tea spoon cumin seeds powder
( 4 ) 1 tea spoon sugar
( 5 ) Salt to taste
( 6 ) Finely chopped coriander leaves

Method

( 1 ) Chop the guava and tomatoes into small pieces. Mix all the ingredients.
( 2 ) Garnish with finely chopped coriander leaves.

Onion Tomato Salad Recipe


Ingredients

( 1 ) 1 onion
( 2 ) 2 tomatoes
( 3 ) 1 tea spoon dhana jeera powder
( 4 ) 1 tea spoon cumin seeds powder
( 5 ) 1 tea spoon sugar
( 6 ) ½ tea spoon chat masala
( 7 ) Salt to taste
( 8 ) Finely chopped coriander leaves

Method

( 1 ) Chop the onion and tomatoes into small pieces. Mix all the ingredients.
( 2 ) Garnish with chopped coriander leaves.

Paneer Salad Recipe


Ingredients

( 1 ) 200 grams paneer pieces
( 2 ) 100 grams cucumber (cut into small pieces)
( 3 ) 2 tea spoons desiccated coconut
( 4 ) 1 tea spoon pepper powder
( 5 ) 2 tea spoons groundnut powder
( 6 ) Few coriander leaves
( 7 ) Salt to taste

Method

Mix all the ingredients and garnish with finely chopped coriander leaves.

Sprouted Mung, Cucumber, Pomegranate Salad Recipe


Ingredients

( 1 ) 100 grams sprouted mung
( 2 ) 100 grams cucumber (peeled and chopped into small pieces)
( 3 ) 100 grams capsicum (cut into small pieces)
( 4 ) 1 red pomegranate
( 5 ) Finely chopped coriander leaves

Method

( 1 ) Mix all ingredients, sprinkle a little chat masala and mix well.
( 2 ) Garnish with finely chopped coriander leaves.

Decorative Mixed Salad Recipe


Ingredients

( 1 ) Cabbage (grated)
( 2 ) Tomatoes (small pieces)
( 3 ) Cucumber (grated)
( 4 ) Carrots (grated)
( 5 ) Grapes
( 6 ) Beetroot (boiled and cut 1 slice. Grate the remaining)
( 7 ) Apple (cut into small pieces)
( 8 ) Desiccated coconut
( 9 ) Groundnut powder
(10) Cumin seeds (powdered)
(11) Ginger-chilli paste

For the masala :

( 1 ) Desiccated coconut
( 2 ) Groundnut powder
( 3 ) Sugar and cumin seeds
( 4 ) A little citric acid
( 5 ) Garam masala
( 6 ) Salt to taste

Method

( 1 ) Add salt to the cabbage and keep it aside for some time. Squeeze it lightly to remove the water.
( 2 ) Mix the masala with the salad ingredients except beetroot, grapes, apple, tomatoes and a little desiccated coconut.
( 3 ) Spread the salad in a serving dish. Cover the four parts of the dish with beetroot. Colour half of the desiccated coconut with edible yellow colour and leave the remaining half white.
( 4 ) Place the beetroot slice in the centre of the dish.
( 5 ) Place 4 cuts on the tomatoes and place it on the beetroot slice.
( 6 ) Cover two parts with white desiccated coconut and two parts with yellow coloured desiccated coconut. Place the fruit pieces at the edge.

Pulses Salad Recipe


Ingredients

( 1 ) Sprouted pulses (mung, muth, rajma, chana, etc.)
( 2 ) Chat masala
( 3 ) Lime juice
( 4 ) Salt to taste

Method

( 1 ) Sprout all pulses. Boil the rajma. Mix salt and chat masala. Add the lime juice.
( 2 ) Decorate with chopped corriander leaves.

Fruit Dish Recipe

Ingredients

( 1 ) Pineapples
( 2 ) Cherries
( 3 ) Grapes
( 4 ) Apples
( 5 ) Chiku
( 6 ) Black grapes
( 7 ) Pomegranate
( 8 ) Mango
( 9 ) A little fruit masala

Method

Chop all fruits in square or equal size and arrange them nicely in a serving dish. Sprinkle a little chat masala over it. Take all fruits as required.

Plain Salad Recipe


Ingredients

( 1 ) Cucumber
( 2 ) Tomatoes
( 3 ) Onions
( 4 ) Capsicum
( 5 ) Carrots
( 6 ) Beetroots
( 7 ) Cabbage
( 8 ) Coriander leaves
( 9 ) Spinach leaves
(10) Boiled potatoes
(11) Lime
(12) A little chat masala

Method

( 1 ) Chop various vegetables into various shapes and sizes. Arrange them in various shapes.
( 2 ) Add salt, chat masala and lime juice to them.
( 3 ) Add the masala lastly otherwise the vegetables would become soggy. Decorate with finely chopped coriander leaves.

Apple Cucumber Salad Recipe


Ingredients

( 1 ) 1 cucumber
( 2 ) 2 small apples
( 3 ) 1 tea spoon pepper powder
( 4 ) ½ lime juice
( 5 ) 100 grams cream
( 6 ) Few mint leaves (finely chopped)
( 7 ) Salt to taste

Method

( 1 ) Cut the cucumber into thin slices. Peel and remove the hard core and slice the apples.
( 2 ) Mix cucumber and apples and add the lemon juice, salt and pepper. Mix well.
( 3 ) Add cream and pour the salad in the serving bowl. Sprinkle finely chopped mint leaves.

Russian Salad Recipe


Ingredients

( 1 ) 1½ fresh curds
( 2 ) 1 small apple
( 3 ) 50 grams pineapple
( 4 ) ½ cup pomegranate seeds
( 5 ) 50 grams grapes
( 6 ) 50 grams cherries
( 7 ) 1 small cucumber
( 8 ) 50 grams cabbage (shredded)
( 9 ) 1 tea spoon pepper powder
(10) 2 tea spoons powdered sugar
(11) Salt to taste

Method

( 1 ) Tie the curds in a thin muslin cloth and keep aside for some time.
( 2 ) Add small pieces of apples, pineapple, pomegranate and cherries. Add grapes, grated cucumber (remove the water by squeezing lightly) and cabbage (soaked in ice cold water for some time before adding).
( 3 ) Add salt, pepper and sugar. Cool in the refrigerator. Serve chilled.

Jelly Salad Recipe


Ingredients

( 1 ) 100 grams jelly powder
( 2 ) 200 ml water
( 3 ) Few drops edible colour
( 4 ) Sugar
( 5 ) Apples
( 6 ) Pineapple
( 7 ) Cherries
( 8 ) Grapes

Method

( 1 ) Dissolve the jelly crystals in 100 ml of hot water and add the remaining cold water.
( 2 ) Prepare jelly of 2 to 3 different colours and set them in separate moulds.
( 3 ) Add sugar to the jelly mixture. Add finely chopped fruits as desired. Set it in the freezer compartment of the refrigerator.
( 4 ) When it is set, cut the jelly into small pieces. While serving, mix the jellies of different colours or you can serve a single coloured jelly with only one fruit.

Fruit Salad Recipe


Ingredients

( 1 ) 1 litre milk
( 2 ) 100 grams sugar
( 3 ) 1 table spoon custard powder
( 4 ) 100 grams grapes
( 5 ) 2 bananas
( 6 ) 1 apple
( 7 ) 2 chikoos
( 8 ) 250 grams alfanso mango
( 9 ) Fresh cream or ice-cream (optional)
(10) A few kesar strands

Method

( 1 ) Apply a little ghee all over in side of the vessel for making custard. Boil the milk on a low flame.
( 2 ) Dissolve the custard powder in a little cold milk and add this to the boiling milk.
( 3 ) Boil for few minutes. Remove from fire and let it cool.
( 4 ) Add all fruits, cut into small pieces.
( 5 ) Cream and ice-cream may also be added. Kesar ice-cream may also be added to give a fine colour to the fruit salad.

Dry Fruit Salad Recipe


Ingredients

( 1 ) 1½ litres milk
( 2 ) 50 grams custard powder
( 3 ) 150 grams sugar
( 4 ) 50 grams ka½u
( 5 ) 20 grams raisins
( 6 ) 80 grams figs
( 7 ) 50 grams walnuts
( 8 ) A few almonds
( 9 ) A few cardamom seeds
(10) Few strands of kesar
(11) Afewpistas
(12) 100 grams of vanilla ice-cream

Method

( 1 ) Boil the milk with constant stirring. Dissolve the custard powder in a little cold milk and add it to boiling milk.
( 2 ) Add sugar. Cook till the sugar dissolves completely. Remove from fires cool and refrigerate it.
( 3 ) Chop ka½u into small pieces. Soak ka½u and raisins in water for 1 hour. Then strain them.
( 4 ) Soak figs, cut into small pieces for 6 hours then strain and refrigerate them.
( 5 ) Soak almonds for 6 hours in water. Remove the skin. If it does not peel off easily then boil the almonds for a few minutes.
( 6 ) Chop the almonds and the walnuts and powder the cardamom. Dissolve kesar in little milk. Chop the pistas into small pieces.
( 7 ) Add all ingredients except figs and ice-cream to milk.
( 8 ) While serving add figs and ice-cream. Serve chilled.

Cream Salad Recipe


Ingredients

(1) 100 ml milk
(2) 50 grams sugar
(3) 500 ml cream
(4) Bananas
(5) Apples
(6) Chikoo
(7) Pineapple
(8) Cherries
(9) 50 grams vanilla ice-cream

Method

(1) Boil the milk. Add sugar and cook it for sometime till sugar malts. Cook it.
(2) Then add cream and fruits cut into small pieces and ice-cream. For 500 ml cream add 1 kg fruits.
