Vegetable Pulav Recipe


Ingredients

( 1 ) 1 cup uncooked basmati rice
( 2 ) ½ lime
( 3 ) Oil
( 4 ) 100 grams potatoes
( 5 ) 100 grams french beans
( 6 ) 100 grams carrots
( 7 ) 100 grams green peas
( 8 ) 2 table spoons ghee
( 9 ) 1 tea spoon cumin seeds
(10) 4 pieces cinnamon
(11) 6 cloves
(12) 4 green chillies
(13) A small piece of ginger
(14) ½ tea spoon turmeric powder
(15) 10 kajus (cashawnuts)
(16) 15 raisins
(17) 1 tea spoon garam masala
(18) Salt to taste

Method

( 1 ) Soak the rice in water for at least 2 to 3 hours.
( 2 ) Boil the rice in water with a little lime juice and 1 tea spoon of oil. When the rice is half cooked drain the water. Each grain of the cooked rice should be separate.
( 3 ) Cut the vegetables into small pieces and boil them.
( 4 ) Heat 1 table spoon oil in a vessel and fry the cumin seeds, cloves and cinnamon for 1 minute. Add the green chillies, ginger, turmeric powder, potatoes, green peas, french beans and carrots. Fry them for 2 minutes.
( 5 ) Add salt, cashewnuts, raisins and garam masala. Add the half cooked rice. Mix carefully (The rice grain should not break).
( 6 ) For making different layers, take a large glass serving bowl. Spread half of the rice, then spread half of the vegetables, next spread a further half of the rice and finally spread the remaining vegetables.
( 7 ) Decorate with finely chopped coriander leaves and fresh coconut (grated). Serve hot.
