Ingredients
( 1 ) 3 to 4 cinnamon pieces
( 2 ) 3 to 4 cloves
( 3 ) 1½ table spoons fennel seeds
( 4 ) ½ table spoon cumin seeds
( 5 ) ½ table spoon sesame seeds
( 6 ) 1 table spoon coarse chana flour (besan)
( 7 ) 1½ tea spoons red chilli powder
( 8 ) ½ tea spoon turmeric powder
( 9 ) A pinch asafoetida
( 10 ) 1 tea spoon garam masala
( 11 ) ½ tea spoon citric acid
( 12) Salt to taste
( 13 ) 250 grams maida
( 14 ) 2 table spoons oil
( 15 ) Salt to taste
Method
( 1 ) Mix flour, salt and oil. Knead the dough like that used for making parathas.
( 2 ) Roast chana flour and other ingredients of 1.
( 3 ) Add all masalas of ingredients 2.
( 4 ) Divide the dough into small portions. Roll out each portion into a
small puri. Stuff 1 tea spoon of stuffing. Roll a little.
( 5 ) Fry on a slow flame till very light pink.
( 6 ) While serving add curds, sweet chutney, garlic chutney, chat
masala, ½ onions, sev, chopped coriander, sprouted mung and boiled
potatoes (cut into pieces).
Note : The ingredients mentioned for serving are optional. Desired ingredients may be added while the others may be avoided.
