Minestrone Soup Recipe


Ingredients

( 1 ) 2 table spoons butter
( 2 ) 2 finely chopped onions
( 3 ) 2 cloves garlic
( 4 ) 1 carrot
( 5 ) 1 capsicum
( 6 ) ½ cup green peas (boiled)
( 7 ) 1 cup cabbage (finely chopped)
( 8 ) 700 grams tomatoes
( 9 ) 1 table spoon corn flour
(10) ¼ cup baked beans
(11) ½ cup macaroni (boiled)
(12) ½ tea spoon powdered cinnamon, cloves, cardamom and pepper
(13) 3 tea spoons sugar
(14) 1 tea spoon red chilli powder
(15) ½ cup white sauce
(16) 1 tea spoon ajinomoto
(17) 4 cups water
(18) ½ cup grated cheese
(19) Salt to taste

Method

( 1 ) Heat the butter in a vessel and stir. Fry the onions for 2 to 3 minutes. Add the garlic paste and fry again for few seconds.
( 2 ) Add all the vegetables, salt and pepper and 2 cups of water. Cook until all the vegetables are tender. Do not over cook the vegetables.
( 3 ) Chop the tomatoes into small pieces and mix them with remaining 2 cups of water. Cook them. Blend the mixture in a liquidizer and strain.
( 4 ) Add the tomato soup to the cooked vegetables. Dissolve the corn flour in a little cold water. Add it to the soup.
( 5 ) Add the beans, macaroni and all the remaining ingredients to the soup. Boil the soup till the cheese melts.
( 6 ) Garnished with grated cheese while serving.
