Shahi Tukada Recipe


Ingredients

( 1 ) 5 to 6 bread slices
( 2 ) Ghee for frying
( 3 ) 3 to 4 cups milk
( 4 ) 1 cup sugar
( 5 ) ½ cup or 100 grams mawa
( 6 ) ½ tea spoon rose essence, a few drops of yellow edible colour
( 7 ) Few strands kesar
( 8 ) 1 tea spoon gelatine powder
( 9 ) A few charolis
(10) 8 cardamom pods (powdered)
(11) A few tutifruiti
(12) A few almonds
(13) A few kajus
(14) A few pistas
(15) A little of nutmeg

Method

( 1 ) Remove the edges of the bread slices. Cut them into triangles. Fry in ghee till they are golden brown. Mix milk and sugar.
( 2 ) Boil till the milk thickens.
( 3 ) Add grated mawa, rose essence and kesar. Mix gelatine with 3 tea spoons full of water and soak it for 5 minutes. Heat on a slow flame till it dissolves. Add this to the thickened milk.
( 4 ) Add cardamom and other nuts. Arrange bread slices in a bowl.
( 5 ) Pour the mixture on the bread, place another layer of bread slices over it. Again, pour the mixture on the bread slices.
( 6 ) Decorate with chopped nuts, charolis and tutifruti. Refrigerate and serve chilled

Note : Instead of kesa, pista colour essence may also be used.
