Upama – South Indian Recipe - Upama Recipe


Ingredients

( 1 ) 1 cup rawa
( 2 ) 2 table spoons ghee
( 3 ) 1 table spoon urad dal
( 4 ) 1/2 tea spoon mustard seeds
( 5 ) 1 tea spoon sesame seeds
( 6 ) 1 onion
( 7 ) A few curry leaves
( 8 ) 2 to 3 green chillies
( 9 ) A pinch asafoetida
( 10 ) 1 lime
( 11 ) 1 tea spoon cloves and cinnamon powder
( 12 ) 2 tea spoons sugar
( 13 ) 1 ripe tomato
( 14 ) 3 table spoons coriander leaves (finely chopped)
( 15 ) Oil
( 16 ) Salt to taste

Method

( 1 ) Heat a little ghee in a vessel. Roast urad dal till light pink in colour.
( 2 ) Add mustard seeds, sesame seeds, onions, curry leaves, green chillies and asafoetida. Saute for a few minutes. Add the rawa to it.
( 3 ) Roast on a low flame like that for sheera till the rawa is light pink in colour. Add enough hot water. For 1 cup rawa, add 3 cups of water.
( 4 ) When all the water evaporates, add salt, lime juice, cloves and cinnamon powder and sugar. Add tomatoes, finely chopped. Decorate with finely chopped coriander leaves can be added to the upama.
